Turkey “Mini” Meatball Muffins

INGREDIENTS:

   1 lb lean ground turkey breast (or chicken)

1 cage free egg

¼ cup fat free feta (or any other fat free soft cheese)

¼ tsp each of ground cumin, dried thyme , and fresh parsely

1 tsp black pepper

1 tsp pink Himalayan Sea Salt

1 tbsp garlic powder or 1 fresh clove minced

1 small onion (finely chopped)

 

DIRECTIONS:

Preheat oven to 375 degrees.

Lightly spray mini muffin pan with olive oil – spread with paper towel

Mix all your ingredients together in one large bowl.

Roll the mixture into balls and place in mini muffin pan. (or use small ice cream scoop)

Bake for 40 minutes.

Makes 24 mini turkey muffins.
