Eggplant Pizza


1 whole eggplant (sliced)

1 med onion (sliced)

1 tomato (sliced)

1/4 cup 2% Mozzarella (shredded) or any low-fat cheese or soft cheese (like Feta)

1T Garlic (minced)

2T Macadamia Nut Oil



Let eggplant slices “dry-out” for approx. 30 mins before you start to cook them.

In 2 different pans, grill Eggplant and saute Onions, use macadamia nut oil on the eggplant and u can saute onions with some water.

Once both sides of the eggplant are slightly browned, remove them and place on baking sheet (or stoneware).

Top each eggplant w/ minced garlic, then sliced onions, lastly a slice of tomato.

Top with cheese and parsley.

BAKE @ 350 for 15 mins
